Get a bunch fresh red of Beets. Usually there are two or three large ones on a bunch. Make sure that the red stems and leaves are nice and fresh looking as you will use all of it. Also that the beets look fresh and not woody.

Cut the stem off the beets and put aside. Peel the beets and slice and then chop. Put very little water in a pot with salt and add the beets and let cook. Most of the water will be gone.

Wash the leaves and stem and chop....in a pan add some olive oil and half an onion and the chopped leaves and stems and cover and let steam fry slow.

When the beets are soft and leaves are done....combine the two...this is a very delicious and nutrious dish and very good for the blood..
